Area of Origin: From the north-western area of Salento, on the Ionian coast.
Hints of the Vineyard: The perfect grapes ripening is fostered by the deep and fertile soil. The warm sun all day long and the sea breezes at night play a very important role as well. The grapes are grown with the organic farming method that implies the use of natural products only. The dry and windy climate warrants healthy and perfectly preserved grapes, thus allowing to minimise treatments.
Vinification: Harvest is made by hand and the grapes are vinified in stainless steel tanks at controlled temperature in the cellar of Torricella (Apulia). The fermentation is performed at 10 -12°C so that the final wine can keep the aromas and flavours of the original grapes as much and long as possible.
Grape Variety: Chardonnay 100%
Tasting Notes: The colour is straw yellow with golden hues. The aroma is intense with primary hints of exotic flowers, secondary notes of ripe fruit and the typical ones of chardonnay such as banana, white peach and pineapple. While tasting the wine reveals the succesful balance between the freshness and the structure of a typical Southern Italy white wine. The pleasant notes of acidity and minerality are well balanced and enhanced by a good body.
Food Pairing Notes: This wine has personality with different features that make it suitable for many pairings and drink occasions. Excellent for happy hour and served with cold starters. Perfect with all kinds of fish, mainlythose having a delicate taste. Serve at 10 -12 °C.
